There’s something magical about the way Italy treats smoke. In mountain huts, coastal towns, and countryside kitchens, smoke wasn’t just a technique, but a way of life. It preserved food, added depth, and turned simple ingredients into something soulful.
This year, we’re especially honoured to bring that tradition to our tables as Chianti joins Italian Food Week 2025, a global celebration led by the Government of Italy and supported by the Consulate General of Italy in Bengaluru.
As part of this week-long showcase of regional flavours and culinary heritage, we’ve created Aromi Affumicati: Smoked Aromas, a limited-time tasting menu that reflects Italy’s love for honest ingredients, slow processes, and food meant to be shared.
A Journey Through Italy’s Smoked Traditions
Each dish on this menu reflects how different parts of Italy approached smoking — from subtle and aromatic to warm and rustic. Here’s a closer look at what inspired us.
Regional Influence | Tradition | How It Shows Up in Our Menu |
Mountain Villages (Trentino, Valle d’Aosta) | Woods like beech & oak used for warmth + preservation | A comforting, rustic Smoked Red Pepper & Tomato Soup |
Northern Coasts & Lakes (Veneto, Liguria) | Gentle cold-smoking to keep seafood delicate | A silky, aromatic Smoked Salmon Fillet |
Countryside & Family Kitchens (Emilia-Romagna, Tuscany) | Light smoke to enhance natural sweetness | A creamy, elegant Smoked Cheesecake with Berry Sauce |
The Highlights of Aromi Affumicati
A few favourites you can look forward to:
1. Smoked Red Pepper & Tomato Soup
Warm, earthy, and incredibly comforting. This dish brings together roasted bell peppers and tomatoes with slow wood smoke - a flavour reminiscent of mountain hearths and winter kitchens.
2. Smoked Salmon Fillet
A delicate cold-smoked fillet that carries a light aroma without overpowering the natural flavour of the fish. It’s the kind of plate that feels both refined and familiar.
3. Smoked Cheesecake with Berry Sauce
A soft, creamy cheesecake lightly touched with aromatic smoke. Paired with berries, it’s the perfect finish — sweet, elegant, and slightly unexpected.
A Limited-Time Celebration of Italian Heritage
Aromi Affumicati is available only for a short period as part of Italian Food Week at Chianti.
